- ผลไม้ที่บ่มไม่ได้ (Non climacteric fruits) - ส้ม ส้มโอ มะนาว สับปะรด มังคุด ลางสาด เงาะ ลำไย ลิ้นจี่ องุ่น เชอรี่ มะกอก มะไฟ มะเฟือง

Please explain (to me) what the purpose of การบ่มผลไม้. Do we want nice colours? Do we want 'sweet' tastes? Do we want cost-saving in harvesting, transporting, marketing,...?
The reason for asking is below.
On the first list มะละกอ is mentioned. I have learned (from experience) that มะละกอ if harvested before 'quarter-yellow' (เหลือง สุก ประมาณ ๑ ใน ๔ ของลูก) won't sweeten up (จะไม่หวาน) when full-yellow. And on the second list 'pineapple' is included. We can harvest pineapples at 'full-green' (เขียวแก่) and 'full-swell' (ตาเต็ม), and leave them to ripe in a week. The pineapples will turn yellow and sweeten up.
Please explain (to me) what the purpose of การบ่มผลไม้. Do we want nice colours? Do we want 'sweet' tastes? Do we want cost-saving in harvesting, transporting, marketing,...?

- Ripeness stage depends upon the purpose of the handle or bussiness , sir.
- For papaya , pineapples and also other climacteric fruits , they must passed the physiological maturity first , otherwise they could not ripe. Sometimes we call beaker stage which new orange or red color appears or occures in the skin of fruit.

Standard (and classes) for fruits ripeness must be established so we can establish fruits qualities and prices. Fruits growers will need to understand the relation between (size, shape, colour, time in season,...) ripeness and price so they can take advantage of this government's initiative. Universities and schools can help with the information and implications.
Your blog on fruits ripeness can be a valuable resource that web browsers will come to read in weeks to come. I would love to see more info and bigger lists ;-)
