I have a different thought from this ¨การกินอาหารเส้นใยสูง และอาหารหมักดองจึงเป็นช่องทางที่ไม่แพง¨. These days ´good’ dietary fibres and pickles are expensive and quite hard to find. The rubbish we often get from markets are full of preservatives (read this as gut bacteria killing substances) and foreign matters’ (read this as ´other rubbish not removed´). Good old/traditional home pickles are best!

I recall a series of 6 articles (Food or Rubbish …) I posted on Gotoknow a few years back. In Food or Rubbish 3 < https://www.gotoknow.org/posts/592300 >, I suggested that we eat ´Food for Life on Us’ (gut biome). It is good to see that there are serious research on this. Fibres are our main food for gut biome. But fibres don´t mean lignin (rubbish, foreign matters).

Incidentally, pickling is a good way to reduce oxalates (calcum salts that can cause kidney problems) in many (wild) vegetables.
