I am experimenting (on myself) eating more "raw" vegetables abd fruits and when I feel like it --not eating at all for a day or so, (Fasting is said in preliminary research results to help grow new brain cells. -- We will soon see if fasting makes me wiser -- less forgetful ;-)
Heat (over 65C) destroys most enzymes and cellular/molecular structures -- so we eat broken down, simpler compounds and not getting any benefits(?) from the varieties of compounds plants can make. And in a way, we also destroy all good and bad micro-organisms the come with veggies and fruits by cooking at high heat. (Yes, I am turning back the clock ;-)
