I don't know this หน่อโจด. By the look of it in the picture, it should be a kind of small bamboo (as you say). Another possible is the yound shoot of 'reed' (another kind of grass which bamboos also belong).

Do we have to boil long and throw away the boiled water -- because the shoots are quite bitter?
