I think 'degree' specifies 'a level' of possession (health, happiness, knowledge, wealth, skill,...) and 'extent' specifies 'a size' (boundary) of field (area, capability, influence,...). So to choose between 'degree' and 'extent' depends on the 'thing' we are talking about.
